Prime Instant Dry Yeast is a special culture of Saccharomyces cerevisiae.
The moisture is removed in such a way that cell viability and leavening power are retained. It is a granular free-flowing yeast for use in dough with sugar levels from 5 – 35% (Baker’s Percent).

Prime Instant Dry Yeast can be used in all yeast-leavened goods with either straight or sponge & dough. It is normally applied in a ratio of 40 – 50% of compressed yeast weight requirements, depending on the sugar content and type of dough. Use 1 to 3 % based on flour weight. Mix with flour or add to dough during first stage of mixing. Avoid direct contact with ice water.

• Shelf life of unopened product stored in cool dry conditions is 24 months from production date if stored at < 25°C
• Refrigeration is not required for unopened packages
• Once opened, keep package tightly closed and store under refrigeration at 7°C
• Allow product to temper to room temperature prior to rehydration and use after refrigeration
Once the package has been opened, however, it is best to use it the same or the next day. Otherwise, it should be stored in a moisture proof bag in the retrigerator and used within a week. It the opened package is stored in a closed container in the freezer, it will remain stable for at least three months.
The recommended methods for rehydrating instant yeast are aimed at avoiding direct contact with excessive amounts of cold water. Using either warm water or a slow rehydration helps to optimize baking performance. The simplest method for using instant yeast is by blending the instant yeast thoroughly with the flour before adding (cold) water. The flour absorbs much of the water so that it doesn’t come into direct contact with the yeast.
